What it is, in one paragraph
A small room. Stone walls, candles, a single long table running through the centre with a few intimate two-tops on either side. The kitchen sends a five-course menu that shifts every two weeks, paced over two and a half hours. Manuel walks the floor, talks about each pour, and keeps the room moving without rushing it. By the end of the meal you've talked with the other tables or you haven't, and either has been fine.
Why "underground"
The room sits below the main level of the resort, half-buried into the slope, with cool stone and low arched ceilings. It's not a gimmick. The temperature stays naturally lower than the rest of the property, the acoustics are warm, and the light source is small candles plus a few soft overheads. After a hot beach day, walking down into Rosalee is a sensory shift that the menu earns.
The menu
Five courses. The kitchen writes a fresh menu every two weeks around the best fish coming in by boat, the produce that's strongest in season, and the wines Manuel wants to pour. We don't advertise it ahead of time because the menu shifts; what we promise is that the cooking is considered, the portions are right, and the pacing is the point.
A typical evening might run something like:
- Amuse. A single small bite, usually something raw or pickled.
- Cold first course. Crudo, tartare, or a vegetable plate with depth.
- Warm second. Often a soup, sometimes a small pasta, sometimes a delicate fish course.
- Main. Wood-fired fish or a slow-cooked meat. Usually a single protein, beautifully sided.
- Dessert and a glass. Light dessert, dessert wine or fortified, a final espresso.
A vegetarian and vegan version of every course is built, not improvised. Tell us in advance.
The wine
Manuel built the list. Old World leanings (France, Italy, Spain) with a deliberate corner for South American and Indonesian producers. Around 80 bottles on the list, which is more than the room can drink in a slow week, so the selection turns over thoughtfully.
The default offer is a wine pairing flight matched to the five-course menu. Five glasses, sometimes a sixth surprise at the end. Manuel pours and talks briefly about each one. If you'd prefer a single bottle for the table, he'll guide you to one that works across the courses. There's also a small option for non-alcoholic pairings (a fermented apple, a kombucha, a tea infusion) that he takes seriously.
How the booking works
Two seatings a night. Roughly 19:00 and 21:00. The room holds 14 covers at each. Reservations close at noon the day of service so the kitchen can shop.
Reserve at check-in or via the BASK Concierge app. In high season the room books out a week ahead. Outside peak we usually have a few seats on shorter notice.
The first seating is calmer. The room is fresh, the team is unhurried, and you finish in time for a walk along the beach. The second seating is more talkative; by 22:30 the room has a hum that suits some guests perfectly.
What it costs
A set price for the five-course menu, plus a separate fixed price for the wine pairing. The total comes in well below comparable rooms in Bali or any major city, which is the calm choice we make here. Solo guests welcome and warmly seated; no surcharge.
Pairing it with the rest of your stay
A few honest sequences:
- Day one Pomona, day two Rosalee. The most common rhythm. Start in the open room with the wood-fire, then move down to the quiet room for the considered evening.
- Rosalee mid-stay, Pomona to finish. If your stay is longer than three nights, this also works. The big dinner at the end with a wider table.
- Both on the same stay, both worth it. They're two different rooms doing two different things. Don't skip one in favour of the other.
Who Rosalee is for
Honeymoons and anniversaries. The room is built for two heads close together over a candle. We can place a corner table if you'd like to be a little hidden.
Wine-curious diners. Manuel will give you as much detail as you want, and stop the second he reads that you'd rather just drink.
Long-stay guests who want a different room than Pomona for one evening. Same property, completely different feeling.
Solo travellers. Genuinely. The single seats along the inside curve are some of the best in the room.
Who it's not for
A few honest cases where Pomona or the beach club is the better night out:
- Diners who want choice. Rosalee is set; no a la carte. Pomona is the room for that.
- Children under 12. The pace doesn't suit them and the room is small. Pomona is the family-friendly evening.
- A loud or rowdy group. The room asks for quiet conversation. A big group with a lot to say should land at Pomona.
A few quiet touches
- No phones at the table. It's a request, not a rule, and almost every table follows.
- The candles are real. Beeswax. They go out by the time you leave.
- Pace. If you want to slow further, Manuel will hold a course for you. He often does for couples who are deep in conversation.
- The leaving moment. A short walk back along the beach to your villa. The night sky over Gili Meno is part of the meal.
Frequently Asked Questions
Do I have to be staying at BASK to eat at Rosalee?
No. The room is open to outside guests, although booking ahead is essential and the in-house guests usually book first.
What's the difference between Rosalee and Pomona?
Pomona is the main kitchen: open-air, wood-fire, a la carte, larger room. Rosalee is intimate: underground, set tasting menu, 14 seats, wine-led. Different evenings.
Can I just order one glass of wine?
Yes. The pairing is a flight, but Manuel will also pour single glasses or open a bottle for the table. Tell him what you want.

Is there a dress code?
Resort smart, same as Pomona. Linen, a light dress, sandals. No heels needed.

Yes, and yes we'll help discreetly. Tell us a few days ahead and we'll arrange the moment quietly. Several guests have done it. We do not announce, applaud, or interrupt the meal unless you'd like us to.
